Aquest ha estat el pastís que ha culminat l'aniversari de la meva germana i meu. 43 i 34. Un any més a la butxaca i un pastís més estrenat!
Ingredients:
150 g de galetes digestive
70 g mantega
400 ml de nata per muntar
100 ml de llet
200 g coco ( 175 g ratllat /25 g en daus)
3 iogurts grecs naturals sense sucre
8 fulles de gelatina (per la mousse)
4 fulles de gelatina (per la gelea)
250 g de maduixes
100 g de sucre
Comencem preparant la base del pastís trinxant la galeta i barrejant-la amb la mantega. Ho estenem al fons del motlle. Triturem part dels daus de coco.
Seguim preparant el farcit. hisdratem les 8 fulles de gelatina amb aigua. Mentrestant, escalfem la llet i afegim la gelatina, sense que la llet bulli i procurant que la gelatina quedi ben desfeta. Semi muntem la nata amb el sucre. Afegim els 3 iogurts grecs. Després, el coco ratllat i, finalment, quan la llet amb gelatina sigui freda, també la incorporem als làctics, i remenem bé. A la base del pastís que hem fet amb galetes hi disposem maduixes, tallades per la meitat. I omplim el motlle amb la mousse de iogurt i coco.
Ara, ho deixem refredar durant 5 hores a la nevera. Finalment, fem la gelea triturant les maduixes amb una mica d'aigua. Afegim, ja hidratades, 4 fulles de gelatina. Quan la barreja estigui cuita, la triturem amb la batedora, la deixem atemperar i l'afegim per sobre del pastís. Per rematar la feina, decorem la tapa amb dauets de coco. I ja el tenim a punt!
