El Manel Cuinagenerosa ha fet anys i per a celebrar-ho amb la família, aquest cop m'he decidit a fer-li un pastisset frescant i gustós, que amb la calor que fa és el que més ens agrada. Un pastisset fàcil de fer, amb un secret, l'elaboració d'una bona crema pastissera i unes fruites de temporada ben maduretes. El resultat, comproveu-lo vosaltres mateixos:
Ingredients:
Pasta de full
Canyella, anís i sucre per aromatitzar la pasta
Crema pastissera: 1 l de llet, 200 g de maizena, 1 pell de llimona, 1 pell de taronja, 1 branqueta de canyella, 5 rovells d'ou, 200 de sucre
Fruites variades: cireres, kiwi, gerds
Perletes de xocolata per a decorar
Partim la làmina de pasta de full en dos i l'aromatitzem amb canyella, sucre i anís. La coem al forn durant 20 minuts a 180 ºC.
Mentrestant, preparem la crema pastissera. D'una banda, aromatitzem una part de la llet amb canyella, pell de llimona i taronja. I després la deixem reposar. En altre bol hi tirem la resta de la llet i hi afegim el sucre, la maizena i els reovells d'ou. Barregem bé. Afegim aquesta barreja a l'altra, un cop retirades les pells i la canyella. Ho afegim a poc a poc i a fora del foc, perquè els ous no se'ns coguin. Un cop tot homogeneïtzat, ho tornem al foc, a foc baix, i anem remanant amb l'espàtula fins que la crema s'espesseixi. Un cop així, apaguem el foc i deixem refredar la crema.
Ara que ho tenim tot a punt, muntem. D'entrada, a la part de baix de la làmina, hi posem la crema. A continuació, hi col·loquem l'altra làmina a sobre (estem fent un mil fulls). Tornem a farrcir amb més crema. I, finalment, decorem amb les fruites, disposant-lse com més ens agradin!
